Jambalaya is a dish I love making and its so so easy. It also lasts for a few days so make as much as you want and keep it chilled. I also like serving this with some garlic bread and soured cream to cool down the spices.

Easy Chicken & Chorizo Jambalaya

- Ingredients
- 2 chicken breasts
- 1 onion diced
- 1 red pepper thinly sliced
- 2 garlic cloves sliced
- 75g chorizo sliced
- 1 teaspoon cajun seasoning
- 250g basmati rice
- 400g tin of plum tomatoes
- 350ml chicken stock
- Instructions
- Warm a pan with olive oil and cooked the chicken until golden and put into a bowl
- In the same pan cook the onions until soft
- Then add in the peppers, garlic, chorizo and cajun seasoning and mix for a few minutes
- Put the chicken back in the pan and then add the tomatoes, chicken stock and rice
- Cover and simmer for 25mins checking it doesn’t dry up completely
