Jambalaya is a dish I love making and its so so easy. It also lasts for a few days so make as much as you want and keep it chilled. I also like serving this with some garlic bread and soured cream to cool down the spices.

How to make it

Easy Chicken & Chorizo Jambalaya

  • Ingredients
  • 2 chicken breasts
  • 1 onion diced
  • 1 red pepper thinly sliced
  • 2 garlic cloves sliced
  • 75g chorizo sliced
  • 1 teaspoon cajun seasoning
  • 250g basmati rice
  • 400g tin of plum tomatoes
  • 350ml chicken stock
  1. Instructions
  2. Warm a pan with olive oil and cooked the chicken until golden and put into a bowl
  3. In the same pan cook the onions until soft
  4. Then add in the peppers, garlic, chorizo and cajun seasoning and mix for a few minutes
  5. Put the chicken back in the pan and then add the tomatoes, chicken stock and rice
  6. Cover and simmer for 25mins checking it doesn’t dry up completely
